Tortang Chorizo



Here's a simple dish that I love to cook. I added something new to it by putting some roasted garlic to add crispness in every bite.. I love dipping this dish with ketchup!

Ingredients:

3 pcs. de-skinned chorizo
3 pcs. eggs, beaten
salt and pepper to taste
roasted garlic, toppings


Procedure:

1. Heat oil in a pan.
2. Put in the de-skinned chorizo and crush. Wait for it to be cooked and slightly brown.


3. When chorizo is cooked remove from the pan and mix with beaten eggs then pour it in the pan to fry.


4. Sprinkle with  salt and pepper to taste.
5. Flip other side and cook for 2 mins.
6. Serve with toasted garlic and enjoy!


Mangosteen


This tropical fruit has recently made a big impact in terms of wellness products and alternative medicine. But why is it that it is now considered as one of the top exported fruits in the country? The answer may be found in some research that Mangosteen have been used to treat skin infections, some diseases even urinary tract infections aside from the fact that its edible pulp is very popular for eating. Mangosteen is also low in Calories and has a good source of Vitamin C. This fruit has a sweet, tangy, juicy flavor with reddish purple rind that has a seed in it. When ripened, the fruit may easily be cracked up by two hands and sometimes the purple juice may stain the skin or fabric. The Phillipines, Thailand, Malaysia and Indonesia are the top exporters of Mangosteen in asian countries.

Lanzones


Lanzones is one of my favorite fruits! the variant of Duku is a very good choice since it has a bigger crown and in size with less sap and very sweet in taste. Generally this fruit is grown in some parts of Northern Mindanao and in the province of Paete, Laguna. But did you know that in some parts of Davao city it's also abundantly grown due to a more favorable weather for this fruit. During peak season of Lanzones particularly during Kadayawan Festival of Davao, the main streets are flooded with different varieties of Lanzones with a much cheaper price along with the other fruits locally grown in the region.

Pritong Daing na Bangus


Daing na Bangus is a simple fish recipe adored by Filipinos. I like to pair this with fried eggplant with a dipping sauce composed of vinegar and sweet shrimp paste!

Ingredients:

2 pcs. Bangus (cleaned and cut sliced into daing)
4 pcs. calamansi
1 cup oil for frying
salt and pepper to taste

Procedure:

1. Season daing na bangus with calamansi, salt and pepper.
2. Heat oil in a pan.
3. Fry daing na bangus skin first and flip it when it's brown and crispy.
4. Serve with your favorite dip!

Eggcited Beef Loaf Slice


I miss eating beef loaf that's why I've decided to cook this for lunch. It's just simple and easy to make because beef loaf is now available in cans and we just thought of a name for it because it's coated with egg and we were excited to eat it, that's why we called it Eggcited Beaf Loaf Slice.

Ingredients:

1 can beef loaf, sliced to your desired size, 150g
1 pc. egg, beaten
8 tbsp. oil for frying
salt and pepper to taste

Procedure:

1. Slice beef loaf to your desired thickness.
2. Heat oil in a pan.
3. Dip beef loaf on beaten egg.
4. Fry beef loaf and make sure both sides are brown and crispy.
5. Serve hot!

Egg Fried Rice

Planning for a Heavy meal breakfast? Here's a good suggestion for you. It's easy and your leftover rice from last night's meal will no longer be wasted. We love to pair this Egg fried rice with dried fish or dried squid. A hot cup of coffee also compliments this easy morning dish. Start your day by preparing your loved ones with this super easy Egg fried rice. Enjoy!

Ingredients:

2 cups cooked or  leftover rice
2 eggs, lightly beaten
3 cloves garlic, minced
2 tbsp. oil
salt and pepper to taste

Procedure:

1. Heat oil in a non-stick pan.
2. Saute garlic until brown.
3. Put rice in pan and mix thoroughly.
4. Season with salt and pepper.
5. Pour in beaten eggs and cook for 3 minutes or until done.
6. Give a good stir then transfer to a serving plate.
7. Serve hot with your favorite dried fish or dried squid!

Pizza Pan de Sal


Kristine, my girlfriend, made this bite size pizza pan de sal. We thought of something for pandesal to enjoy it better and we thought of pizza because both of us love to eat pizza. This is a great snack for everyone to enjoy!

Ingredients:

8 pcs. pan de sal
1 pack pineapple tidbits, 115g
2/3 cup quick melt cheese, grated
1 pouch sweet pizza sauce, 115g
1/2 cup sliced ham, diced into small pieces
mint leaves for garnish (optional)

Procedure:

1. Slice pan de sal in half, horizontally and set aside.
2. Spread sweet pizza sauce on each sliced pan de sal.
3. Top with ham, cheese and 2-3 pcs. of pineapple tidbits.
4. Place in oven for 3-5 minutes until cheese melts.
5. Serve and pair it with hot chocolate or coffee.

Law-uy

This is a delicious Visayan dish, a healthy vegetable soup called Law-uy. You can put lots of veggies into it like, eggplant, string beans, okra, malunggay, and many more.

Ingredients:
1/2 kilo squash
2 cups saluyot
2 cups takway ( Taro or gabi shoots)
1 small onion
2 tablespoons fish paste ( bagoong dilis)
2 cups water
salt to taste 


Procedure:
1. In a pot put the water, onion  and fish paste then bring to a boil. When boiling add the taro shoots,  simmer for 5 minutes.
2. Add the squash then simmer until half cooked then add the saluyot and salt to taste and continue to simmer until cooked.
3. Serve it hot.

Sweet and Sour Fish


My mom came over yesterday and I decided to cook sweet and sour fish because I knew that it is one of her favorite dishes. She loved it and ate a lot. She said the sweet and sour taste blended well.

Ingredients:

1 whole milkfish (bangus) cut to your desired size
1 pc. onion, sliced
5 cloves garlic, minced
1/3 cup ginger, cut into strips
1/3 cup vinegar
2 tbsps. sugar
1/2 cup water
salt and pepper to taste

Procedure:

1. Heat oil in a pan then fry the fish until golden brown. Set aside.

2. In a clean pan, saute onion, garlic and ginger.
3. Add 1/2 cup water and simmer for 5 minutes.
4. Add in vinegar, sugar, salt and pepper then bring to a boil. When boiling add the fried fish and simmer for 5 minutes then turn off the heat.
8. Serve it hot!

Talbos ng Kamote Salad


I know some of you have grown Camote tops in your backyard. This green leafy plant is so easy to maintain as there is no fertilizer needed for this vegetable to grow. Camote tops or locally known as Talbos ng Kamote has an excellent source of anti oxidant property which protects us from diseases such as cardiovascular diseases and cancer. It's rich in fiber, proteins and minerals. So better make it a habit to include this vegetable on your diet. Here's a good suggestion to make a delicious Camote tops salad.

Ingredients:

2 bunches sweet potato tops (talbos ng kamote)
1/2 cup vinegar
1 small onion
salt and pepper to taste 

Procedure:

1. Blanch the sweet potato tops and drain.
2. Mix the vinegar, onion salt and pepper then pour over the blanched sweet potato tops.
3. Serve and enjoy.
