Morcon


Morcon is indeed a festive dish in the Philippines. It's traditionally meat rolls stuffed with eggs, cheese, pickles, ham and a lot more. You can choose your stuffed fillings. This dish may take a long time to cook but its worth the wait after you taste all the flavors packed in it.

Ingredients:

1 kl beef sirloin, cut into morcon style
200 grams sliced ham or sausages
1 cup cheese, sliced into strips
2 hardboiled eggs, sliced into quarters
1 medium carrot, sliced into strips
1 pc pickle, sliced into strips
1/2 c soy sauce
2 tbsp Calamansi juice
1 white onion, sliced
2 cloves garlic, minced
1 bay leaf
2 tbsp tomato paste
1 red and green bell pepper, chopped
1/2 c liver spread
3 tbsp flour
water
cooking oil
salt and pepper

Procedure:

1. Season the beef with soy sauce, Calamansi juice and pepper. Marinate and refrigerate for about an hour.
2. Prepare the stuffed fillings for the morcon. Arrange the ham, cheese, eggs, carrot and pickle into the marinated beef. Roll it and secure it with a string.
3. Dredge the beef roll into the flour.
4. Heat the oil in the pan and cook the beef rolls until brown. remove from heat and set aside.
5. Meanwhile, saute the garlic, onions then add the red and green bell peppers And bay leaf. Return the beef rolls into the pan. Add some water and let it simmer until beef is tender. Stirring occasionally.
6. Lastly add the liver spread and the tomato paste. Stir well and season with salt and pepper to taste. Simmer for 5 minutes until cooked.
7. Slice into serving size and serve with the sauce. Enjoy!

Beef Pares

Beef Pares are beef briskets tenderized with aromatic spices and paired along with garlic rice or extra broth. So when you say 'Pares' it's a local term for 'Pair.' This Filipino dish is usually served at Tapsi houses and Carinderias. Another beef recipe will surely be a hit to your taste buds. Give it a try!

Ingredients:

1/2 kl Beef brisket, sliced into cubes
7 c water
1/4 c soy sauce
1/4 c sugar
1/2 tsp black pepper
1 tbsp ginger, minced
1 pc onion, minced
2 cloves garlic, minced
3 c beef broth
2 star anise
2 tsp cornstarch, dissolved in 1/4 c water
Salt to taste

Procedure:

1. In a stock pot boil the water and the beef for 2 hours or until the beef is tenderized. Set aside and reserve the broth. If using pressure cooker, boil it for 30 minutes.
2. Saute the garlic, onion and ginger and add the beef, soy sauce, black pepper and sugar and let it simmer for 3 minutes.
3. Add 4 c of beef broth, star anise and some salt. Bring to a boil and let it simmer for 5 minutes.
4. Lastly add the dissolved cornstarch while stirring to avoid it from forming lumps. Simmer until it thickens. Remove from heat.
5. Serve it with some Garlic rice or beef soup. Enjoy!

Nilagang Baka

A perfect way to treat your self during the rainy season. Try the rich flavor of filipino version of beef stew. The nilagang baka! Here's our cooking tip! Slowly boiling your beef chunks over low heat locks in all the flavors in it and makes your beef tender. However if you don't have enough time, there's always the reliable pressure cooker to use.

Ingredients:

1 kl beef, cut in chunks
1 head cabbage, cut in quarters
1/4 kl chinese cabbage
2 corn cobs, cut into 4 slices
1 onion, sliced
1 tbsp peppercorn
2 tbsp fish sauce
salt and pepper

Procedure:

1. In a stock pot, boil your beef with onion and peppercorn. Let stand for atleast 1 hour or until the beef is done. Add more water if the beef is tough.
2. Season with fish sauce and cover for 5 minutes.
3. Add the sliced corn cobs. Adjust the taste with salt and pepper. Cover for 10 minutes.
4. Add the cabbages and cook until done.
5. Serve hot with fish sauce for dippings if prefered.

Veggie Tenderloin


Flavors from this beef tenderloin is irresistible. The veggies gives a balanced taste to this dish. We enjoyed tenderloin so much that we ate a lot of rice with this! You should try cooking this for your family too! They would surely enjoy it!

Ingredients:

1 kilo beef tenderloin
1/2 cup soy sauce
1 tsp. sugar
1 pc. laurel
carrots, sliced 1/2 inch long
Baguio beans, sliced 1/2 inch long
corn kernels
chayote, sliced 1/2 inch long
salt and pepper

Procedure:

1. Cut beef tenderloin about 2 inches long.
2. In a mixing bowl combine soy sauce, sugar, pepper, laurel and salt.
3. Put beef tenderloin together with the mixture. Marinate overnight.
4. Blanche carrots, Baguio beans, chayote and corn kernels. Set aside.
5. Deep fry beef tenderloin.
6. In a pot, combine beef tenderloin and blanched veggies. Saute for 2 mins.
7. Serve and enjoy!

On A Budget Burger



We love to eat burger! So we have decided to make it without spending too much. Here's what we've made on just a low budget!

Ingredients:

1 pack. El Rancho burger patties, 225g
2 pcs. tomatoes, sliced
3 pcs. quick melt cheese
3 pcs. burger bun
lettuce
4 tbsp. mayonnaise
1 tbsp. mustard
3 tsp. white sugar


Procedure:

1. Cook burger patties in a frying pan.
2. Cut burger buns into half.
3. Combine mustard, mayonnaise and sugar.
4. Spread some of the mustard and mayonnaise mixture on each side of sliced bun.
5. When burger patties are cooked, place them on the bun and top with cheese, lettuce and tomatoes.
6. Serve with some fries and chips on the side! Enjoy!

Eggcited Beef Loaf Slice


I miss eating beef loaf that's why I've decided to cook this for lunch. It's just simple and easy to make because beef loaf is now available in cans and we just thought of a name for it because it's coated with egg and we were excited to eat it, that's why we called it Eggcited Beaf Loaf Slice.

Ingredients:

1 can beef loaf, sliced to your desired size, 150g
1 pc. egg, beaten
8 tbsp. oil for frying
salt and pepper to taste

Procedure:

1. Slice beef loaf to your desired thickness.
2. Heat oil in a pan.
3. Dip beef loaf on beaten egg.
4. Fry beef loaf and make sure both sides are brown and crispy.
5. Serve hot!
